Roasted Fingerling Potatoes

Crisp on the outside and tender inside, these roasted fingerling potatoes are a delicious side dish! Seasoned with garlic and fresh herbs, they feel elegant enough for special occasions, but they're so simple that they're perfect for weeknights too.

Ingredients

1½ pounds fingerling potatoes, halved lengthwise
2 teaspoons extra-virgin olive oil
2 teaspoons chopped fresh rosemary
Heaping ½ teaspoon sea salt, plus more to taste
½ teaspoon garlic powder
¼ teaspoon onion powder
Freshly ground black pepper
2 teaspoons fresh lemon juice
Chopped fresh parsley, for garnish

Instructions

Preheat the oven to 425°F and line a baking sheet with parchment paper.
Place the potatoes on the baking sheet and toss with the olive oil, rosemary, salt, garlic powder, onion powder, and several grinds of pepper. Arrange the potatoes in a single layer on the baking sheet, placing them cut side down.
Roast for 35 to 45 minutes, or until the potatoes are tender and browned underneath.
Remove from the oven and toss with the lemon juice. Season to taste with salt and pepper, garnish with parsley, and serve.
