I would love someone to make eggplant parmigiana for Mother’s Day, Homemade Mariners sauce and lots of cheese over lightly breaded roasted eggplant. Add a light, crisp salad, followed by a delicious Greek chocolate whipped creme cake! Once a year it’s ok to splurge! And to share it with my five kids, their spouses, friends, and all my grand-babies! Heaven on earth!

Well, my mom is too far away for me to cook for her this weekend, but we send recipes back and forth all the time! I’m obsessed with the spring-on-a-plate socca recipe in L&L Everyday, and she is obsessed with a one-pot (stove top) pasta with a classic marinara sauce, so we going to make each other’s favorites!
